Galantino Coratina Extra Virgin Olive Oil

Coratina is Puglia’s signature olive — a native cultivar that grows almost nowhere else and gives an oil with real backbone. A single variety, pressed on its own with nothing blended in, so what you taste is the grove and nothing else. Green, grassy, and unapologetically bitter, with the long peppery burn that catches the back of the throat.

That intensity is the point. Coratina is the oil for dishes that can carry it: bitter greens, beans, grilled meat, aged cheese, anything that needs a green edge and a little heat. It also holds up where a delicate oil would vanish — assertively dressed salads, ribollita, a bowl of cannellini with nothing but oil and salt.

🌿 Full-bodied – coats the palate; a little goes a long way
