Affiorato is the old Puglian word for the oil that rises to the top of the settling tank and is drawn off by hand — the lightest, cleanest fraction of the pressing, skimmed patiently rather than pumped. Galantino still does it that way. The result is a Gran Cru built on delicacy instead of force: pale gold, light fruity, and almost weightless on the palate.
This is not a cooking oil. It is the last thing that touches the plate — the thread of green oil over a torn ball of mozzarella, the finish on grilled fish, the drizzle that makes a plate of tomatoes taste like August. Because the yield is small, so is the case: six half-liter bottles, sized for the pass rather than the prep line.
